Vegetarian Chili

Last week, I have organised a party with some friends. Some of them are vegetarian or vegan. So I decided to make them happy (of course!) and I did a vegetarian chili  (without meat). They told me that it was delicious and they would like the recipe. It took time to post it because I had to do another one, after the party nothing was left. What a good compliment!

For 4 people

Chili sin carne :
-2 garlic cloves
-1 onion
-1 green bell pepper
-1 red bell pepper
-1 yellow bell pepper
-1 jalapeno pepper
-2 lbs red kidney beans
-2 lbs white beans
-2 lbs diced tomatoes
-1 lb corn
-1 Tbp chili powder
-1 Tbp cocoa powder
-1 tsp dried oregano
-1/2 tsp salt
-1/4 tsp black pepper
-FM canola oil

Chopped the garlic and onion.
Seeded and chopped the bell peppers and the jalapeno pepper.
In a large saucepan, heat the oil, cook the vegetables, stirring often, until they begin to soften.
Add the rest of the ingredients, bring to the boil and cook for 15-30 minutes until beginning to thicken slightly.
It's ready!

- You can cook the chili the day before the party and warm it up just before the party. The chili should be even better.
- For the beans and tomatoes, you can buy some cans. It will be faster and easier compare to cook the beans on your own. But do not forget to drain and rinse them before using.
- For my friends, I did not serve the chili with sour cream or shredded cheese to keep it vegan but I used some for the picture to make it attractive. I served the chili with some sweet potatoe chips. That was perfect.
